$30 apples * 30 apples \neq 900 apples$

$30 apples * 30 apples = 900 apples²$

A percentage isn't a variable you can assign a value to, rather it is a fraction out of $100$ . e.g. $52$ % $= \frac{52}{100}$

To take your example. If we had $300$ apples, $10$ % would be $30$ apples but $10$ % $* 10$ % would be $3$ apples.

To further explain this, the percentage sign is used to denote a fraction of a number ( $10$ % $= \frac{10}{100}$ for example). Every percentage in an equation must first be simplified down to one percentage in order to properly calculate the result.

In the form of a general equation:

$a$ % $* b$ % of $n$ $= \frac{ab}{100}$ % of $n$
