Gluten is a kind of protein that attaches itself to the starch molecules. It can be commonly found in various grains, including wheat, oat, barley, and rye.

With its property of holding water molecules among the starch itself, gluten plays an important role in the elasticity of flour. That is precisely how the dough can be maintained in its shape during baking. Therefore, many products, such as bread or beer, usually contain gluten and should be avoided in patients with celiac disease.

Celiac disease is a hereditary autoimmune disease, where the body produce antibodies against the intestinal villi (absorbing subunits), causing diarrhea, bloating, shortage of absorption, and even malnutrition. This disorganized inflammation stems from ingestion of gluten, which has certain amino acids that cross-link with peptides of the villi themselves. As a result, the immune cells mistakenly "recognize" villi as a threat and "attack" the cells in their own body.

Despite cutting many grains out of their menu, patients with celiac disease still have a variety of choice for their source of carbohydrates, such as rice, corn, potato, etc.
