For any object in motion, we may think about the object's horizontal and vertical accelerations independently. Both the monkey and the bullet are experiencing the same vertical acceleration, gravity, thus they both fall at the same rate and are always at the same height. They will collide, unless the man is so far away that his bullet hits the ground first (in this case, the bullet and the monkey should hit the ground at the same time).
