Sentence 1 has 5 words, sentence 2 has 6 words, sentence 3 has 6 words, and sentence 4 has 8 words. So they are all true except for sentence 3.

Sentence 2 does not contain cabbage, thus it is not true.

If the full sentence were "this sentence contains cabbage", you would be correct.

Denton, if they are all true except for sentence 3, and there are 4 sentences total, why is the answer ·2· sentences are true?

Because Brilliant apparently disagrees with me and won't explain why. I still maintain that the answer is 3.
