(5/1) - (1/5) = (25/5) - (1/5) = (24/5) = 4.8 In other words the "answer" which is claimed for this question is incorrect: 5 whole pieces - 1/5 of a whole piece is not equal to 4, it is equal to 4 + (4/5).

I think you are mis-interpreting the question. When It states she eats 1/5 of her candy canes, it means she eats 1/5 of the total that she has, not 1/5 of one particular candy cane.
