The rougher the surface of the candy is, the more nucleation sites it has. Nucleation sites are the areas that allow the carbon dioxide bubbles to form. More carbon dioxide bubbles translates to a bigger explosion, propelling the soda further into the air.

so generally that means the rougher the surface , the higher the geyser.
