Because, when a single pin is used to burst a balloon, the area of the point where the pin is pierced is very small.
And as the pressure is inversely proportional to area, the pressure is very high.
Next, if it is kept under a hundred balloons the pressure applied is very low, or the pressure is equally spread between all the pins and over the balloon!!
